In the Cup
From the birthplace of coffee, this washed Yirgacheffe delivers the archetypal Ethiopian flavor profile: bright citrus acidity, delicate jasmine florals, and a tea-like body that finishes clean and sweet. Produced by YCFCU, a cooperative of over 300 smallholder farms in the Gedeo zone, each cherry is depulped within hours of harvest and fermented in clean spring water for 36-72 hours before gentle drying on raised beds. The result is a coffee of remarkable clarity and elegance — the benchmark against which all washed Ethiopians are measured.
SCA Cupping Protocol
Evaluated by two independent SCA-certified Q-graders using a blind cupping protocol. Every attribute scored on a 10-point scale.
Total Score
87.5/100
Scored using the SCA Specialty Coffee Association cupping form. Attributes rated on a 6–10 point scale; uniformity, clean cup, and sweetness rated as 0 or 2 points per cup. Disagreements of more than 3 points trigger a third evaluator.

Yirgacheffe, Gedeo Zone, Ethiopia · Est. 2002
The Yirgacheffe Coffee Farmers Cooperative Union represents over 300 smallholder farms across the Gedeo zone, the birthplace of Arabica coffee. Founded in 2002, YCFCU has become the gold standard for washed Ethiopian processing. Member farms average less than 2 hectares each, cultivating indigenous heirloom varieties under a dense canopy of native shade trees. The union operates 23 washing stations where cherries are depulped within 8 hours of picking, fermented for 36-72 hours in clean spring water, and dried on raised beds for 10-14 days. YCFCU reinvests premiums into healthcare clinics, water projects, and farmer training programs that have lifted yields 40% over the past decade.
